Ingredients
50 g pumpkin seeds
75 g walnuts
110 g dates
75 g dried apricots
Zest of 1 orange
20 g sesame seeds

Prepare the Seeds and Nuts:
Fry the pumpkin seeds in a pan over medium heat until they are lightly toasted. Set aside to cool.
In the same pan, roast the walnuts until they are fragrant and lightly browned. Let them cool and then chop them into small pieces.
Prepare the Dates and Apricots:
Soak the dates in water for 15 minutes to soften them. Remove the stones from the dates and chop them finely.
Finely chop the dried apricots.
Blend the Ingredients:
In a blender or food processor, combine the chopped dates, dried apricots, roasted pumpkin seeds, and chopped walnuts. Add the orange zest.
Pulse until the mixture is well combined and starts to come together.
Form the Mixture:
Transfer the mixture to a clean surface and form it into a cylinder shape using your hands. Press firmly to ensure the mixture holds together.
Prepare the Coating:
Fry the sesame seeds in a pan over medium heat until they are lightly toasted.
Coat the Cylinder:
Roll the formed cylinder in the toasted sesame seeds, ensuring it is evenly coated.
Freeze the Cylinder:
Place the sesame-coated cylinder in the freezer for 2 hours to set.
Serve:
After 2 hours, remove the cylinder from the freezer and slice it into bite-sized pieces.
