In a mixing bowl, combine the cream cheese, granulated sugar, vanilla extract, and lemon juice. Mix until smooth and creamy.
Lay an egg roll wrapper on a clean surface and place a spoonful of the cream cheese mixture in the center. Add a few pieces of chopped strawberries on top.
Heat vegetable oil in a deep skillet or frying pan over medium heat. Once hot, fry the egg rolls until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest to make the glaze.
Drizzle the lemon glaze over the fried egg rolls before serving.
