2 large cucumbers, thinly sliced
2 tablespoons of fresh dill, finely chopped
1 tablespoon of vinegar (apple cider or white)
Salt and pepper to taste

In a mixing bowl, combine the sliced cucumbers and chopped dill.
In a small bowl, whisk together the olive oil, vinegar, salt, and pepper.
Pour the dressing over the cucumbers and dill and toss gently to coat.
Refrigerate for about 30 minutes before serving to enhance the flavors.
