To make the sausage:
Heat the olive oil in a large frying pan over a medium heat.
Add the sausage pieces and cook until golden brown.
Remove from the pan and reserve.
To make the sauce:
In the same frying pan, add the onion and garlic and fry for 3-4 minutes until soft.
Add the tomatoes in the stock cube and cook for a further 2-3 minutes.
Reduce heat and stir in cream cheese and grated cheddar, blending until cheese is melted and creamy.
