Prepare the Oven: Make sure that your oven is preheated at 425°F (220°C).
Prepare the Potatoes: Peel if needed and chop potatoes into chunks of equal sizes approximately 1-2 inches each.
Rough Edges: Shake pot so as to make surfaces of potatoes rough – providing extra crumbly crunch.
Baste in Oil and Coat: In a large baking tray put olive oil/fat inside then heat it in an oven for around 5 minutes after which add the prepared potatoes carefully and sprinkle some salt, black paper and garlic powder if using.
Roast: Roast in an oven for 30-40 minutes, turning occasionally, until the color becomes golden and crispy.
Add Herbs: If you are using fresh herbs, then add them when there is only ten minutes remaining to roast for a better taste.
Serve: From the oven, remove it, let it cool down slightly and serve it hot.

Choose the Right Potatoes: Waxy potatoes hold their shape well & become fluffy inside.
Don’t Crowd the Pan: The potatoes need enough space to make sure they brown evenly all over.
Use High Heat: To have a crispy exterior when roasting high temperature is key.
